Pancake Recipe

I was just experimenting with some food today and came up with a pretty yummy recipe for buckwheat pancakes.  Here is the recipe, feel free to try and even add your own twist to it :)

Buckwheat Pancakes:
1 Cup Organic Buckwheat Flour
2 Tbsp LSA Meal
1 Tsp Baking Powder
3 Sticks of Natural Sweetener (I used Natvia)
1 Egg
Splash of Milk (as needed)
Coconut Oil for cooking
Honey or Golden Syrup for topping

1. Place the buckwheat flour, LSA meal, baking powder, and sweetener together in a bowl.
2. Add the egg, mix together, then add the milk and mix until it forms a batter consistency.  Leave for 1/2 to 1 hour for the mixture to thicken, stir and add more milk if needed.
3. Heat the coconut oil in a fry pan, then spoon in the pancake mixture, flip when the pancake starts to form bubbles on the top.
4. Serve with honey or golden syrup or whatever else you have on hand or feel like.  Enjoy!

P.S: Even my fussy little eater Master E loved these 'cakes' ;)
