Tomato Relish Recipe

We have had a great yield of tomatoes this year, they have done really well.  Luckily I was able to have enough extra to make two lots of my fave tomato relish.  This is the recipe that my Grandmother used and we all love it.  It's a very simple recipe with the main star of the show being the tomato of course!

Tomato Relish

Makes about 4 x 350ml jars

1.5 kg tomatoes, blanched, skinned and quartered
4 onions, quartered
2 tbsps salt
2 cups brown sugar
2 1/4 cups malt vinegar
1 tbsp dry mustard powder
1 tbsp curry powder
2 tbsps plain flour
1/4 cup malt vinegar

1. Put tomatoes and onions into a non-metallic bowl.  Sprinkle with salt and leave for 12 hours.  Drain off liquid formed.
2. Put the tomato and onion mix, sugar, and first measure of vinegar into a large saucepan or preserving pan.
 3. Boil gently for 1 1/2 hours, stirring frequently.
 4. Mix mustard, curry, flour and second measure of vinegar to a smooth paste.  Stir into relish.  Boil for 5 minutes.

 5. Pack into sterilised jars.  Let them cool and enjoy!
