ANZAC Biscuits

Thursday the 25 April was ANZAC day, although I don't have anyone in my own family that was an ANZAC it's still a day that we take note of in our family.  Just a reflection, where we feel thankful for the life we live here in Australia.  So each year to mark the occasion I bake ANZAC biscuits, this is the recipe that I use each time.  Even though it's a really easy recipe, I find that the only I bake these biscuits is on ANZAC day.


100g Butter
1 Tbsp Golden Syrup
1/2 Cup Sugar
3/4 Cup Coconut ( I use desciated)
3/4 Cup Rolled Oats
3/4 Cup Plain Flour
1 Tsp Baking Soda (Bi-Carb)
1 Tbsp Hot Water

  • Melt butter and golden syrup together in a large saucepan.  Cool.
  • Mix sugar, coconut, rolled oats and flour together.  Stir into saucepan.
  • Dissolve baking soda in water and mix in.
  • Place rounded teaspoonfuls on a greased oven tray.
  • Bake at 180C for 15 mins., or until golden

Belvita Biscuits!

Recently I was lucky enough to trial a packet of Belvita biscuits from Product Talk by Nuffnang.  I had seen these biscuits in the supermarket, but never really thought much about it.  When I recieved the email asking if I wanted to try them I was interested!  It was very exciting getting a package in the mail and my three year old loved it.

We unwrapped the biscuits straight away, just to have a taste.  We received the cranberry & 5 wholegrains.  I have to say they are some of the most yummiest biscuits we've tasted.  My three year old even liked them (and he's a very fussy eater). 

Belvita biscuits are for breakfast but I found myself having them at any time of the day for a quick snack.  I even tried them with cheese and to my surprise they were very nice!

They come in a pack of 4, you get 6 packs of 4 biscuits in each box.  The biscuits are even great to keep in your handbag or in the car, especially if your a busy Mum and you don't have much time to sit down and eat. 

So to wrap it up we found the Belvita Breakfast Biscuits, very tasty, they are nice and crunchy with the added chewy sweetness of the cranberries.  We managed to demolish the whole box in no time.  I recommend this product for anyone, especially busy Mums like myself.
