Ginger Crunch

This is the recipe for the yummy ginger crunch that I made.  My Mum used to make it all the time and this is the recipe that she used.

Ginger Crunch

125g Butter, softened
1/2 Cup Sugar
1 1/2 Cups Plain Flour
1 Tsp Baking Powder
1 Tsp Ground Ginger

50g Butter
1/2 Cup Icing Sugar
1 Tbsp Golden Syrup
2 Tsps Ground Ginger

Cream butter and sugar until light and fluffy.  Sift flour, baking powder and ginger together.  Mix into creamed mixture.  Turn dough out onto a lightly floured board.  Knead well.  Press dough into a gresed 20x30 cm sponge roll tin.  Bake at 190C for 20-25 minutes or until light brown.  Ice with hot ginger icing.  Cut into squares when cool.

In a small saucepan combine butter, icing sugar, golden syrup and ginger.  Heat until butter is melted, stirring constantly.

Meal Plan Monday

I hope everyone had a great weekend! We got a few house jobs done, I caught up on all the washing and we started clearing out our converted garage/studio space.

Here is our meal plan for last week:

Monday: Macaroni Cheese

Tuesday: Pumpkin, Sweet Potato and Mushroom Risotto

Wednesday: Leftovers

Thursday: Chicken Burgers

Friday: Rissoles and Mashed Potatoes

Saturday: Spaghetti Bolognaise

Sunday: Corned Silverside, Boiled Potatoes and Green Beans

Ginger Crunch

On Saturday I felt like something sweet so I decided to make this very yummy recipe 'Ginger Crunch'.  My Mum used to make it when I was younger and I had tried to make it before, but had failed, it turned out like ginger sponge.  The recipe is fairly easy if you follow it exactly.

July Crochet Progress

At the end of June I started to make a granny stripe blanket to try and use up all of my spare balls of yarn and to have a nice blanket to keep warm in a Tasmanian winter.  I found the pattern for this blanket at one of my favourite blogs Attic 24.

Here is my progress so far.  It is slow going for me as I'm a bit of a slow crocheter, but slowly and surely I'll get there!  This blanket will go on our bed in the cooler months, so it fits a queen size bed.

I also brought myself a little present yesterday as I couldn't resist it... It's the Sew! book by Cath Kidston.  I  love her designs they are just beautiful.  I can't wait to get cracking and sew something out of the book.  I've had a quick flick through and have already got my eye on a few things!

The New Homemaker

Lately we have been reassessing what direction our lives are taking and what path we want to go down.  For me that is working in the home, supporting my family, cooking from scratch, knitting, crochet, sewing, making our own cleaning products, growing our own food and homeschooling.  There is something that I find very satisfying about all these things and there is always something new to learn.

There is a fantastic post today on Down to Earth that explains the role of the new homemaker and how we can stand up to our critics and the value of the work we do in the home.  If you are interested in this type of lifestyle and work I would really recommend checking it out.

Thursday: Beef Stew and Mashed Potatoes

Friday: Leftover Beef Stew Mini Meat Pies and Bean Salad

Saturday: Roast Chicken Dinner

Sunday: Tomato Soup

Baking: Chocolate Fudge

View from our living room today
Reading: I am just loving Down to Earth by Rhonda Hetzel it just really connects with me and lifts me up.  I'm nearly at the end of From Russia with Lunch by David Smiedt, which I don't want to end, and am about to start reading Milly-Molly-Mandy Adventures with my children.  I'm also reading up on Permaculture and quite a few many other things.
Watching: All of the Star Wars movies, Escape to the Country and The Simpsons.  
Anticipating: Spring (September) when the weather starts to get a little warmer and the Spring flowers are out and my daughters first birthday.  22 Days of Intuitive Creative Art and finishing organising and decluttering my house.
Eating: Lots of stews and soups and also trying out some vegan and raw recipes.
Thinking About: My family history I've been researching a lot lately and have found it very interesting.
Planning:  All the things I can use for the 22 Days of Intuitive Creative Art and planning all the things I need to do to get the rest of the house organised, tidy and decluttered.

Meal Plan

Today is meal plan day and it's the first day of July already.  I have been very absent from my blog lately and for good reason.  I have been busy getting our lives in order, finding direction.  I've been figuring out how we are going to make the best of our situation right now!

Ideally we would love to have a bigger house and more land for veggies, fruit and animals, but right now we don't have that and the reason we don't have that is simple... We can't afford it.  So I've been inspired by some articles and websites and have come to the conclusion that we will be here for a while, even though I'm not that keen on suburbia...

We are going to make the most of our situation.  To some that may seem obvious, but for me it's taken a long while for me to realise it.  So here's to setting off on a somewhat new adventure!
